I have recently discovered Rukmini Iyer’s new book ‘The Roasting Tin’. I can’t recommend this book highly enough as it is full of tasty, easy, generally quick, nutritious meals.
So I wanted to share my current favourite recipe with you. If this wets your appetite I recommend you buy the book (this isn’t an ad!). It’s available here:
Steam-roasted salmon & broccoli with lime, ginger chilli & garlic.
This recipes serves 4 but I add lots more vegetables on the side so I have a colourful plate!
400g broccoli – cut into small florets
2 cloves of garlic – grated
2 tbsp of sesame/veg oil
4 salmon fillets
2 spring onions – chopped
2.5cm ginger – grated
1 red chilli – finely sliced
2 tbsps fish sauce
4 tbsp veg oil
2 limes – zest and juice
Preheat the oven to 180c fan/220c/gas 6. Place the broccoli florets in a large roasting tin, scatter over the garlic, sprinkle over the oil and toss well to mix.
Place the salmon fillets into the roasting tin along with the broccoli, cover the tin tightly with foil, transfer to the oven and bake for 20-25 minutes, until the salmon is cooked.
Meanwhile, mix the spring onions, ginger, chilli, fish sauce, veg oil, lime zest and juice and coriander
